So as it is Easter – the season of all things egg shaped and covered in chocolate, I thought I would post a recipe up that is super tasty but a healthier version of those shop bought types!
These eggs have also been tried and tested with kids too and go down so well, so why not make a big batch and share with the family!
P.s Dont forget to come down to Evolution Project over Easter and work off those eggs! 🙂
Ingredients
¾ cup almond butter
½ cup almond flour (or coconut if you do not have any almond)
¼ cup coconut palm sugar (or alternative)
½ cup cacao
1-2 tbsp sweetener of choice (I used raw honey)
1 tsp coconut oil
Method
Mix together, butter, sugar and oil until smooth
Roll into egg shaped balls and place on grease proof paper into the freezer to harden for 15-20mins
Melt cacao (or if making your own melt 100g cacao butter over ban-marie –then add cacao) add sweetener and mix until smooth.
Using a toothpick, dip one egg in the mixture at a time until all are covered
Back into the freezer 20-30mins to harden
Store in the fridge and share when ready
