Amazing Easter Eggs – That Everyone Can Enjoy!

So I know most of us at The Evolution Project, Camberley are looking forward to having a little Chocolate Egg to munch on over Easter but when your focus is on health and seeing results, is there a way you can enjoy a little treat and still keep on track?!

Yes there is! The treats I have made are great for the whole family! Natural ingredients using an incredible Raw Organic Superfood – Cacao!

My Easter eggs are really easy to make and you can get the whole family to join in to help you!

Gems Raw Chocolate Easter Egg

70g Raw Cacao

2 Tbsp Organic Raw Coconut Oil

2 Tbsp Liquid Natural Sweetener

Heat all ingredients over a Ban-Marie until completely melted and well combined. Pour ingredients into Easter Egg Mould until the mould is covered. Place in freezer to set, keep adding more chocolate to the mould and setting until you get the desired thickness you want. (I did this x2)

Place the two halves of the moulds together and with a fine brush, stick the moulds together using left over chocolate, set in the freezer one last time.

Gems Caramel Easter Eggs

Same Ingredients for Raw Easter Egg chocolate

Coconut Caramel Filling

1/4 Cup Coconut Sugar

1/4 Cup Coconut Milk

Pinch Himalayan Salt

1-2 Tsp Vanilla Extract

Place coconut sugar, coconut milk and salt in a small pan. Heat slowly while stirring to dissolve the coconut sugar.

Bring mixture to a simmer. Cook for 10-15 minutes. The sauce will thicken further as it cools.

To test, take the saucepan off the heat. Spread a little sauce in a bowl and place in the freezer for a few minutes. If the caramel doesn’t thicken, simmer the sauce for a little longer.

Stir vanilla extract into finished caramel sauce.

Heat chocolate as above, pour into moulds until shape is covered and leave to set in freezer. (Again I did this x2) with the space left, pour a heaped tsp caramel into your mould and set in the freezer.

Using the chocolate you have left pour over the top of the caramel and freeze to set.
