So I finally had some time this week to get back into my kitchen and get creative! – Yippie!
I threw a few things around (in a creative way!), made a load of mess and came up with this super healthy and low carb bread – it is super yummy, easy to toast and it lasts the whole week!
Gems Zucchini & Broccoli Loaf
(makes 12-14 slices)
- 6 free range organic eggs
- 1/2 cup coconut oil
- 1/2 tsp Himalayan sea salt
- 3/4 cup almond flour
- 1 cup shredded zucchini
- 1 cup shredded broccoli
- 1 Tbsp fresh thyme
- 1/2 tsp organic garlic powder
- 1 tsp baking soda
- 2 tsp organic apple cider vinegar
Instructions
Mix the Eggs, Coconut Oil, Organic Apple Cider Vinegar, Zucchini and Broccoli together.
In a separate bowl, mix the Almond Flour, Himalayan Salt, Thyme, Garlic Powder, and Baking Soda.
Combine liquid ingredients and dry ingredients together and mix.
Pour into a greased loaf pan lined with parchment paper and sprinkle the top with Himalayan salt.
Bake at 180 for 50-60 minutes or until cooked through.
Allow to cool completely before serving.
-I topped mine with Avocado and Lime spread (1/4 mashed avocado with 1-2 tbsp lime) and sundered tomato paste (handful of sundered tomatoes, dash of water and sprinkle of himalayan salt-blend together) topped with poached eggs for extra protein!
