So Wednesday night was sooo hot, I just had to take advantage
and make us a meal alfresco! Super easy and perfect for the summer
weather!
Rainbow salad- (presented on my fave love heart board) -amazing
natural ingredients -sundried tomatoes, cucumber, peppers, beetroot,
organic fresh tomatoes and green peas and beans. Delicious
fresh hard-boiled eggs (chicken for the man) with my homemade pesto
sauce and….
homemade cauliflower tortillas to wrap all the lovely
ingredients in!
Drink – water with lemon/lime and cucumber – perfect for
hydrating the body!

To make cauliflower tortillas, start by making cauliflower rice the same way as in the quiche recipe. Once drained and cooled, bind in a bowl with 2 eggs and 1 tsp of oregano. Spread mixture onto a baking sheet in 6 flat circles. Oven cook on 180 for 10mins…flip them over and then 5mins the other side. Easy!
