Spinach and Sun-drenched Tomato Muffins

So here is a super quick and easy recipe for you and one i use as a go to, so often when i am caught short at home and starving! You can have them as a snack or with a great big salad as a main meal, either way, super yummy!!

Ingredients: 

5 eggs

handful of sun drenched tomatoes, chopped

big handful of spinach

half a red pepper, chopped

Coconut oil, for coating

pretty much any vegetables can go into this
so be creative 🙂

Method:

Pre heat oven to 180 and grease a muffin
tray with coconut oil.

Spoon veggie mixture into muffin tray, make
sure to cover the bottom of each hole with the mixture. 

Whisk eggs together until blended and pour
over the vegetable mixture.

Bake 20-25 minutes. This amount makes quite a few so you can put some in the fridge and enjoy later. 

Eat!
