New Forest Foraging

 So James and I (and my baby Benson of course) had a lovely 2-day
walking trip in one of my favourite places- New Forest. One of the few places
you can go and feel like animals have right of way over humans…or just as much
right anyway…and that’s how it should always be!  

One of the best things you can do for yourself is to ‘get lost’ in
nature to restore the balance within yourself and quiet the inner voice ‘your
ego’ from sinking its negative roots into you.

Whilst there, we went to an awesome Vegan festival RawFest and met
some truly inspiring people and got our creative juices flowing (well mine
anyway, James was too busy erm…sampling it all-for research purposes of course)

Now being a veggie means that stopping at a service station on the
way down and attempting to buy a healthy snack is, lets face if, pretty
impossible, food manufacturers today are pretty clueless! So the morning of our
journey, I made some awesome Matcha energy balls for the trip down there.
Matcha is incredible and such an added bonus to put in your diet.

Matcha helps to boost your metabolism, has heaps of antioxidants
(yay) detoxifies the body, enhances your moods and contains cancer fighting properties!
I could go on….and on…

Here is the recipe that I made, super easy and super tasty,
definitely recommend keeping a batch handy for those moments you get caught
short!

Matcha Power Balls

Ingredients

½ cup ground almonds

½ cup coconut
shreds

1 tsp Matcha powder

1 TBSP freshly
squeezed lemon juice

1 TBSP liquid
sweetener (I use raw honey)

1 TBSP coconut oil,
melted

Coconut shreds for
topping

Instructions

Add all ingredients to a bowl and mix well until they are all
combined and you have a sticky, green dough.

Roll into balls, add coconut topping and refrigerate.

 Enjoy!!
