CHRISTMAS TREATS

So i have just got back from 2 weeks in sunny Florida and was definitely not feeling very christmassy. I decided to quickly whip up some festive gingerbread in order to get into the mood and enjoy whilst watching one of the best christmas movies…elf! so good! 

These are all natural ingredients and fab to share with kids and adults alike so get baking in time for the big day!! 🙂

Ingredients 

.    300g almond flour

.    1 tbs. ground ginger

.    1 tsp. cinnamon

.    1 tsp. nutmeg

.    ½ tsp. baking powder 

.    ¼ cup coconut oil melted

.    2 tbs. raw honey

.    1 tsp vanilla extract

.    1 egg

Method

Preheat oven to 180 degrees celsius.

In a large bowl mix the almond flour, cinnamon, ginger, nutmeg,
baking powder. 

Blend the coconut oil,
raw honey, vanilla extract + egg until combined.

Add the dry ingredients and mix to form a
dough 

Take out the mixture + knead a little to form a ball.

Place the mixture between 2 pieces of baking paper + roll out to
3mm thick.

Place this into the refrigerator for 30 minutes.

Once refrigerated, cookie-cut into desired shapes (like
gingerbread men, stars +  trees!) + place carefully onto a lined baking
tray (you will probably need 2 trays).

Place into the oven + bake for 15 minutes or until golden
brown.
